Hot pot (Huo Guo), also known as shabu-shabu, steamboat, or soup dish, has been enjoyed in Asia for generations. The base of the traditional hot pot holds charcoal briquettes above a grate, allowing ash to fall below so more briquettes can be added to keep the pot hot. Food is cooked in the pot fitted over the base. The pot has a ring-shaped design with a central tube extending above the lid to serve as a chimney for charcoal smoke.
